  • The Feed openings: Purple Yam, Cafe DuCharme and more

    In addition to Manhattan Inn opening this week, the following restaurants and bars are expected to open no later than November 11. Always call ahead before heading out, since openings can sometimes be delayed.

    Cafe DuCharme On September 14, Swiss national Christian DuCharme stepped off a plane in New York with the idea of opening a café. He realized his vision in record time, debuting a homey space in Park Slope less than two months later. The menu includes coffee (New York’s Dallis), as well as pastries from Ceci-Cela and breads from Sullivan Street Bakery. Diners can order breakfast items such as homemade muesli and smoked salmon with toast. Savory dishes, including salads and sandwiches, are available all day. 668 President St between Fifth and Sixth Aves, Park Slope, Brooklyn (646-288-7644)

    Purple Yam Amy Besa and Romy Dorotan made their reputation serving expertly prepared Filipino food at their now shuttered Soho restaurant, Cendrillon. Ditmas Park residents are the lucky recipients of their next project, a bamboo-accented Pan-Asian eatery serving small plates. Fans of the original can look forward to old favorites like pork adobo, alongside new additions such as homemade kimchi and a variety of noodles, including Korea’s japchae and the Phillipine’s pancit bihon (rice noodles cooked with pork, chicken, vegetables and stock).     The Meat Hook: Coming your way November 11

    picture-10Tom Mylan was awfully tight-lipped around fall preview time. The hot sexy married butcher kept his mouth shut regarding the “food-dork megaplex” he’s working on with the folks behind the Brooklyn Kitchen. But there’s some movement o’er in the Borough of Kings. Harry Rosenblum checked in with the Feed to announce an opening date for the Brooklyn Kitchen Labs and the Meat Hook. D-day is November 11, but you can already order your Thanksgiving turkey at the Hook’s way-beta website, the-meathook.com.

    While you’re there, sniff around Mylan’s blog. We can’t promise a shirtless butcher centerfold, but we can promise a recipe for 20 gallons of chili…which more or less inspires the same hike in body temp, no?

    The saying is “it takes a village,” but in New York, it takes a borough to raise a rooftop farm. Last night Roberta’s Pizza called together urban agrarians, locavore enthusiasts and some of Brooklyn’s best artisan purveyors to raise funds in support of a one-acre rooftop farm they’ll break ground for early next year.     Though reps from The Brooklyn Kitchen were mum when we approached them with this exact theory a month ago, Brooklyn Based announced today that indeed TBK is in cahoots with superstar butcher Tom Mylan for his forthcoming project, the Meat Hook.

    The butcher shop is just one component in a “food-dork megaplex” that will also house TBK’s expanded culinary education center, home-brewing goods and just about every other Brooklyn artisanal amenity your grass-fed heart can handle. Get a Mast Brothers retail shop in there, and it would be like a Plato’s Retreat for locavores.

    Interestingly, the reveal is buried in an “ask the butcher” column and isn’t the marquee item. At Brooklyn Based, as at the Feedbag, Josh Ozersky’s tirades on the folly of grass-fed beef take top billing. Sigh.

    Once, wrote The New York Times in 1891, “butchers were both artists and aristocrats.” Well, that golden era is back, although you don’t have to doff your cap and give them your first-born this time around. Meet the butchers, as well as bartenders and baristas, behind a renaissance in their respective fields in this look at hot new culinary careers.

    We spoke to butchers like Mark Pastore of Pat LaFrieda, Tom Mylan of Marlow & Daughters and Nicolas Ottomanelli of Ottomanelli Brothers about their craft, as well as the man who put the art back into bartending in the early ’90s, Dale DeGroff. There’s also Sam Penix, a career barista from Everyman Espresso, and many more.
