Despite the widespread interest in local farms and sustainable agriculture, the fact is, for most of us it’s pretty hard to get out of the city to spend meaningful time on a farm. Thanks to Flying Pigs Farm and a grant from the New York State Department of Agriculture and Markets, those who work in the food industry—managers, waiters, line cooks, chefs, writers, retailers, etc.—can participate in Farm Camp, a two-day experience featuring in-depth workshops and farm tours. Topics covered will include understanding lingo such as grain-finished and free-range, regional butchering practices and the food distribution system, and will be held at a number of participating farms like Dancing Ewe and Mapleland. The cost of a weekend is $150, which includes all food and lodging; view the schedule here. And for those who aren’t in the business, hold tight—there’s a chance that a special open-to-all session will be held. Stay tuned!
