
That tan will only amplify beneath the Miami sun, Miss Arpaia!
Seems our speculation has come to fruition. Camp Psilakis checked in this morning to let us know that the Greek toque, along with his front-of-house sister-in-arms, Donatella Arpaia, has signed on to handle culinary concepts at the Viceroy Miami.

Psilakis, who in 2008 was named a Food & Wine Magazine Best New Chef and Bon Appetit magazine’s Chef of the Year, will create menus for the stunning Kelly Wearstler-designed signature restaurant on the hotel’s 15th floor and 50th floor lounge. Chef Psilakis will also craft menus for the spa, in-room dining and all on-premise catering. Restaurateur and culinary personality Donatella Arpaia will work with Kor on front-of-house operations and service standards. The yet-to-be-named restaurant, Psilakis’ first outside New York City, is slated to open in April.
Looks like Scotty “Scarpetta” Conant will have a hometown buddy to carouse with soon enough.
