The Feed just received word that Park Slope newcomer Bussaco changed chefs about two weeks ago, due to some differences in vision between owner Scott Carney and former chef Matthew Schaefer. According to Carney, “I’m very responsive to constructive criticism from our customers; [Matthew and I] had a hard time agreeing on how to morph the menu in a way that would answer some of the needs of the neighborhood.… “He was sort of a purist, a little more artistic: He was using brussels-sprout leaves, whereas I wanted to use whole brussels sprouts. I wish him well, and hope that we’ll survive his departure, too.” The new chef is Kevin Adey, who was previously Bussaco’s sous chef, and, like Schaefer, worked for a period at four-star seafood temple Le Bernardin. Carney tells us that they will gradually change the menu to make the transition as smooth as possible.










This sucks! Chef Schaeffer will be sorley missed…… i hope the owner is not shooting himself in the foot.
I’ve eaten some of Chef Adey’s creations and they are fantastic. This is a talented guy. Give him a chane and he will not disappoint.
We dined at Bussaco last night, after hearing many enthusiastic comments about it.
The food was delicious, super fresh ingredients, skillfully prepared. The wine list is fantastic, put together by a master sommelier (a kind and mild mannered genteleman).
The whole staff is very friendly and very efficient; you can tell that they really want to make their patrons happy.
We warmly recommend this restaurant and will go back.
