Following its recent closing by the Department of Health, Seymour Burton will not reopen under the same name. "We’re going to reopen, but probably not as Seymour Burton," explains owner Adam Cohn. "When we first opened, we were constantly in a state of renovation; when the DOH closed us down, it coincided with the slowest time of the year, so we decided to take advantage and address some of the less focused aspects of the original concept."
When the new restuarant opens (slated for September), expect an updated interior and menu, though the general theme will still be "rustic American." Other changes: Co-owner Adam Kushner won’t be involved in the new venture, and the cult-favorite burger will return to the menu, but in a different form. "I’m changing it; I don’t think you can live in the past," said Cohn, "We’ll see if the new burger can earn as many friends as the old one did." According to Cohn, chef Josh Shuffman, who is currently working as executive chef at The E.U., will return with the new venture.
