Today the New York Times* is reporting that Missy Robbins has left Spiaggia to take over the kitchen at Manhattan’s A Voce. This was news to me, so Eat Out Editor Heather Shouse and I started digging. Turns out that this was, happily, a situation void of drama: Her partner-in-cuisine Tony Mantuano told us that Robbins simply wanted to get back to Manhattan, and this seemed like the perfect opportunity.
Of course, her departure leaves Spiaggia without an executive chef. For now, Mantuano will fill that role, and Sarah Grueneberg has been promoted to Chef de Cucina. Grueneberg has been at Spiaggia for a while now—she started three years ago as a line cook, then worked her way up to sous chef, and then again to purchasing director. Though she won’t have quite the same role that Robbins did (Mantuano will take the lead role in seasonal menu changes, etc), Mantuano is excited to have her on board, and thinks she’ll be "great." So great, in fact, that they’re willing to send her to Italy for three weeks of staging in January.
