Boystown pillars Stu Zirin and John Dalton of minibar and winebar just embarked on what looks like a pretty long road to unveiling their newest project, a yet-to-be-named margarita bar. Truth be told, a handful of names are currently being batted around, including (wait for it…) Dirty Sanchez.
The Tex-Mex theme was inspired by Dalton’s southern roots, but Zirin will be overseeing the small plates menu. The food is really just a precursor to the main event: 80 different varieties of ‘ritas, or more specifically, tequila-based cocktails. Frozen drinks will rule, and an outdoor area is hoped to be a prime sipping spot when it opens next May.
Why so long? The duo is taking over the Bad Boys space (3352 N Halsted St), but has also purchased the empty lot adjacent to Bad Boys and will build, er, Dirty Sanchez from the ground up.
